Massimo's Grilled Onions

If you can find Tropea onions, they are the best, but just about any onion will work.



MASSIMO’S GRILLED ONIONS


Ingredients:

2 large red onions or 6 tropea onions

1 clove garlic, minced

2 TB extra virgin olive oil

4 TB balsamic vinegar (not the thick aged variety)

1 TB honey

Salt and pepper to taste


Directions:

If using red onions, slice thickly and leave slices intact onto a medium high grill. If using tropea onions, cut off tops and grill whole. Turn onion slices over when browned and turn tropea onions until all sides are browned and onions are softened. Cut the tropea onions in half lengthwise. Dress with a mixture of the remaining ingredients and allows to marinate 15 minutes. Serve at room temperature.
